Here’s a simple recipe for Veggie Quesadillas serving four:

Ingredients:

  • 8 medium flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 2 cups assorted vegetables (bell peppers, onions, zucchini, mushrooms, etc.), sliced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Instructions:

  8. Once cooked, remove the quesadillas from the skillet and let them cool for a minute.
