Chocolate Souffle

Here’s a recipe for a delightful Chocolate Soufflé serving four:

Ingredients:

  • 2 tablespoons unsalted butter, at room temperature, for greasing the ramekins
  • 2 tablespoons granulated sugar, for dusting the ramekins
  • 4 ounces good-quality dark chocolate, chopped
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar, for dusting (optional)
  • Fresh berries or whipped cream, for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Place a baking sheet in the oven to preheat as well.
  2. Grease four 6-ounce ramekins generously with softened butter. Dust the insides of the ramekins with granulated sugar, tapping out any excess.
  3. In a heatproof bowl set over a pot of simmering water (double boiler), melt the chopped dark chocolate, stirring occasionally. Once melted, remove it from the heat and set aside to cool slightly.
  4. In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of salt until pale and slightly thickened.
  5. Gradually add the melted chocolate to the egg yolk mixture, stirring until well combined.
  6. In a separate clean bowl, using a hand mixer or stand mixer, beat the egg whites until they form stiff peaks.
  7. Gently fold a third of the whipped egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites in two additions, ensuring not to deflate the mixture.
  8. Divide the soufflé mixture among the prepared ramekins, filling them almost to the top.
  9. Run your thumb around the inside edge of each ramekin to create a slight indentation, which helps the soufflés rise evenly.
  10. Place the filled ramekins on the preheated baking sheet in the oven and bake for about 12-15 minutes until the soufflés have risen and are set on top but slightly jiggly in the center.
  11. Carefully remove the soufflés from the oven and dust the tops with powdered sugar if desired.
  12. Serve immediately, as soufflés deflate quickly. Optionally, accompany them with fresh berries or a dollop of whipped cream.
